When I’m trying to relax, one of the things I like to do is bake. I think it’s the process of preparing everything and following the methodical steps that helps my mind to turn off and in turn makes me feel calmer. For me, it’s a sense of concentration when I follow the directions, have all the ingredients neatly placed, and the oven is set to the correct temperature. There is also a sense of achievement, a sense of creating something from scratch, which in turn brings a sense of accomplishment and peace. Plus, you get to eat something delicious afterwards which is a sure win, right?!
With that in mind, I’m sharing my favorite soft and delicious chocolate chip cookie recipe, so if you’re in need of something delicious to bake this holiday season, check it out.
Often life takes over and I don’t always have time to bake or do other things I like to do to relax. Life gets busy and we end up letting the things we do to refocus ourselves slip away. Okay, let’s talk about cookies again! From years of trying different cookie recipes, tweaking and combining them, I finally came up with my perfect recipe. These are my go-to when I need a sweet treat, maybe it’s been a hard day or maybe I’m in a festive mood, this batch of cookies never disappoints. It’s super quick and easy, so give it a try!
Ingredients
¼ cup granulated sugar
1 cup soft light brown sugar
½ teaspoon of salt
A stick of melted butter (1/2 cup)
1 large egg
1 teaspoon of vanilla extract
1 ¼ cups white all-purpose flour
½ teaspoon baking powder
10 oz milk chocolate (the best quality you can buy)
- First, mix the sugar, salt and butter in a medium bowl until smooth.
- Add the egg and vanilla extract until fully combined
- Now combine the flour and baking powder with a spatula, go gently and do not mix too much, just until the flour no longer appears.
- Mix the chocolate pieces
- Chill the dough in the refrigerator for at least 45 minutes
- Using an ice cream scoop, scoop the batter onto a baking sheet and bake for 11 minutes at 350F. Once you see a browned edge, it’s time to remove them!
- Cool on a wire rack and enjoy.
